The only charges would relate to data usage on the Vodafone network. if the plan is "unlimited" (not sure if that's even an option there) or enough that you won't exceed the monthly allotment, you won't be charged. Also, are you buying the iPhone in Australia, or somewhere else? Make sure it is unlocked, so it will accept the Vodafone SIM when you're there.
I was in Australia last year, purchased a SIM and a prepaid plan from Telstra, and added data (4GB/month) to the plan. I was there only 10 days, so 4GB was more than enough. I had Skype on my Nokia N8 phone (unlocked, purchased from Amazon.com) with the Aussie SIM, and also ran a hotspot app on the N8 so I could use Skype on my iPod Touch to make calls. Both Skype apps worked great, and saved a lot of pesos for calls between Australia and the USA. The 4GB data ensured I didn't have to pay for WiFi in hotels I stayed at. Telstra's network was awesome.
