Just to add: I have same problem: The Iphone (on Verizon) will show on other computers cycling through "online"-"away"-"do not disturb" but when using "Invisible" or "offline" it will show "online" with additional note "on a mobile device". This happens both via WIFI and on 3G.
The last part is even worst because now clients might not want to call be because skyping on a mobile device might be seen as "not being in the office" or as "better not bother".
My HTC Droid (also on Verizon) has none of these issues.
Noted under "General Setting" for Skype a option to delay going offline: changing this to "immediate" made no difference.
Waiting for suggestions.

Update: I think I found reason for this issue (at least here): my iPad with Skype on it remains active despite the protection cover lid being closed. Going to "offline" on Skype on the iPad solved the issue and I can cycle through all statuses on the iPhone. Just too many toys around the house I guess.......As always, there can be a small delay on the other computer before it shows but I can say it "works as normal".
