Adding audio participants if you have 10 video participants

Once I hit the 10 video participant limit, can I continue to add audio participants?

No, the group video call will be turned into an audio-only conference then.
Even if you add an eleventh participant that is not sending video he would still need to receive video from 10 others and that's where the technical limits (bandwidth, processing) are.
