I had similar problems with my E72, my Skype stopped working (app icon was missing) and I could not re-install Skype (either from Nokia Ovi or via my PC with the installation file).
To re-install or install Skype I used the installation file and I installed it from my PC using Nokia PC Suite. I was getting the "out of date certificate" error as well when trying to re-install.... so......
I did this:
Before trying to install or re-install, change the phones calender to an EARLIER date in 2011 (DD.MM.YYYY). I did so today using 21.06.2011. This allowed the installation to complete (no more certificate error).
After installation you can change the phones date back to current date. I was able to use my Skype again.
Note: My first log in took some time but if finally got there and my Skype works.I canceld it once then rebooted the phone, then the log in was faster.
I tested my Skype with a couple ofcalls and I had no problems.

Here is what I did
On the PC:
. downloaded this file
. copied the file to the phone usind standard windows explorer - to phone memory - installs
On the Phone:
. Changed the date as suggested
. opened the file using the standard Office - File Mgr. | browsed to : phone Memory - Installes files - Skype_S60_3_0_v_1_5_0_12.sisx | and selected it. -> installation begins
. after installation reset the date to TODAY
. restarted the phone
. removed the installation file using the file manager
